I’m a bit tardy, but it’s #HappyFoodmas time!
Tonight we’re headed to Colombia.
Christmas just isn’t Christmas in Colombia without natilla and buñuelos. Natilla is Spanish for custard. Buñuelos, deep fried cheese fritters, are served along side it.

Similar to dulce de leche and flan, natilla is custard with a cream base containing panela (hardened brown sugar), cinnamon, corn starch and whole milk.
Depending on preference it can be served creamy or firm.

It is believed that natilla was first made in convents of Europe before being spread around the world by the conquistadors during colonialism.

The Colombian version can also contain coconut, caramel, raisins, prunes or chocolate.
Sometimes cinnamon is used as a garnish.

Some families make the natilla over an open stove or campfire.
Although, it’s a holiday treat people obviously eat natilla year around.

More than a dozen women sell natilla daily between Bolivar and Carabobo.
Vendors sell roughly 30 kilos daily and upwards of 50 kilos daily during the holiday season.
