I haven't shared a gift for followers in ages, so how about a recipe for Onion Jam to spread on sandwiches?
Ingredients:
4 TBSP olive oil
1 quart of thinly sliced onions, broken apart

1 tsp dried thyme
2 tsp dried parsley
1 bay leaf

4 TBSP sugar

2 TBSP balsamic vinegar

The spaces are steps in the cooking. Heat the olive oil and add the onions. Make sure they are coated in oil. Add the spices and cook until transparent, reduce heat and keep cooking until they begin to brown. Add sugar, keep cooking until everything is browned and melty (15 min)

Add balsamic vinegar, continue cooking until all the liquid is absorbed. Let cool and store in a container. It's a delicious addition to sandwiches. Here I have roasted pear slices with Onion Jam and Tomato Jam on rye.

I guess I need to share Tomato Jam as well since I love to combine it with onion jam on a roast pork sandwich or grilled cheese, or grilled pears.

Tomato Jam
Put all ingredients in a thick sauce pan, simmer on low for 90 minutes or so, cool, and store

2 tomatoes, remove the core and chop
1/3 cup of sugar
1 small lime, use zest and juice
1 tbsp grated ginger
1/2 tsp of ground cumin
1/4 tsp of cinnamon
1/4 tsp ground cloves
1/2 tsp salt
1/2 tsp red pepper flakes

I don't have an outdoor grill or anything, I just turn my fan on high and grill the pears on the electric burners. lol

Tomato Jam is wonderful on knäckebröd. Like with slices of dill and grapefruit, or with some feta and fennel,

Now, if you want to have something so delicious you will feel like you died and went to heaven...you need some Bacon Jam - but I will do that another day.
