Get it all in a big roasting tray! And scatter over all those herbs! Drizzle with some olive oil and then get your hands in and get it all mixed in!

What an hour can do! Just look at that roast! I could totally just eat this now, but then I’d have no gravy!

Next stage! Get it on a low heat on the job, grab a masher and start mashing up all the veg and chicken. Get all the sticky gnarly bits from the bottom and make sure it’s all mixed in. The longer you fry for, and the darker it is, the darker the gravy!
Right now we’ve got that fry on, 4 Tablespoons of plain flour, get it all mixed in and get the kettle on. Make sure the mix is throughly coated and then carefully pour 2 litres of boiling water in!

We’re on! Grab a spoon and make sure you scrape all the sticky bits from the bottom!

Right time to let it reduce and grab all that amazing flavour. I leave it about half an hour before we get it through the sieve!

Just take a look at that. We’re nearly ready for that money shot.

The recipe would’ve called for some Cranberry Sauce by now, but that’s going in on day when I add the turkey juices!

My tip at the stage is to pass it through a colander to get a lot of the large bits out

Final Step! Pour it through the sieve, this will make the gravy smoooooth, super tasty and ready for the big day!
