Coincidence.

It's not like there were other countries doing anything like putting a million muslims in concentrations camps, committing mass slaughters, invading sovereign countries, or murdering/jailing critics during that time. After all, Israel let some Jews build houses.
Let's say you only cared about Muslims: Assad massacred tens of thousands of innocents (including Palestinians!), Iranian oppression/terrorism, China put nearly ~1M in re-education camps, several massacres in West Africa.

Yet somehow the UN focuses almost exclusively on Israel..
What makes Israel different?

Why is this one tiny state that is the size of NJ held to such a wildly different standard than every other country on earth...

Must just be coincidence.
Jews have faced one attempted pogrom after the next. Israel represents Jews saying that they will no longer be at the mercy of others for their survival.

That idea, that Jews are entitled to self-determination and self-defense, like all other people, is what infuriates so many.
No one questions the legitimacy of Jordan, Lebanon, Iraq, Syria etc. to exist as independent states.

Only one state in the Middle East has had its very existence questioned from the start and consistently targeted for destruction by others.
Which is why Israelis don't really care about these resolutions. They know what motivates them, and it's not a concern for justice, minority rights, or peace.

Jews made the mistake of voluntarily getting on the trains before. Israel is the living embodiment of a lesson learned.
Now that doesn't mean Israel is perfect or shouldn't try to live up to the values and ideals that it preaches, but it simply won't be lectured about those things from people motivated by bigotry who would hand it over for destruction in a second.
