The nice folks at @blueapron kindly sent a box of dinners, and we decided to cook two of them last night (RocketSon is vegetarian). It was these two, pork meatloaf and freekeh ‘fried rice.’
Preparation was easy, it’s fun to have all the ingredients portioned. And it’s nice to have one less thing to plan and shop for at supper time. Cooking two at once is a bit of a challenge, but still good fun. @blueapron.
The first was delicious, pork meat loaf with hoisin/soy glaze, and garlic ginger mashed potatoes. I overcooked the bok choi leaves, but it was still tasty. The glaze was amazing, willl definitely keep that recipe.
The other was a big one pot dish, faux fried rice made with freekeh, which I have not used before. It was really tasty, with egg, veggies, rice vinegar and soy. The freekeh becomes soft but with a bit of toasted crispiness. This foto sucks, I was in a hurry. :)
The freekeh dish had fresh green beans and shishito peppers, you sprinkle chopped peanuts, red chili flakes, and green onion on top, it was super flavorful and the mix of textures was really nice.

I should have put it in a flat bowl, it would have been prettier. :)
I have to say, if you can afford it, @blueapron is a very nice morale booster and adds real variety to your meals when you are home and don’t necessarily know how to cook in every style you normally get in restaurants. And there’s always leftovers. We really enjoyed these two.
