The EU warns of what we know to be true: a UK Government administering its own post-Brexit environmental laws could sell us all down the river compared to the EU protection we currently enjoy. If not the current Government, any future Government could.

Why? Because no UK Government can "tie the hands" of a future Government under domestic law. EU law would trump that. So right now, what the EU environmental laws do is provide a FLOOR below which we cannot weaken our own laws. (We can make ours stronger than that, if we want.)
After Brexit, that protection is gone. There is no floor any more. Boils down to this: "Do you trust the current UK Government, and all future UK Governments to come, to always look out for the best interests of the UK more than the EU does?"
