I love that southern and midwestern cities are not afraid to rock the fruit/pecan/goatcheese/raspberry-vinaigrette salad that went out on the coasts after the 1990s. Because that salad is delicious, and the kale that has replaced it is not.
On the other hand--and I say this with love--these cities really need to up their quinoa game, or stop serving it. It's not supposed to taste like you emptied the office shredder into a bowl and dumped some random vegetables on top.
After eating some quinoa in Atlanta, I think I understand why people in the heartland imagine that those of us on the coasts are just pretending to like it for some undoubtedly-nefarious purpose.
