More. Here we have roasted coriander as an additive as we know that was used in Old Kingdom baking. It smells incredible. Really amazing. Grain, yeast, spices, comfort.
OK so that’s 5 more loaves practice. This is all building toward us attempting to master this particular kind of Ancient Egyptian baking. More soon. Next steps!
Crumb. In case you’re wondering, this is 100% Emmer, milled fresh here, with our candidate AE yeast. AE Old Kingdom bakers used clay pots, called bdj3 (bedja) which is why the conical shape!
