if you are an android user, i recommend f-droid to download apps, instead of the app store. this guarantees that you are safe and ensure privacy (because it's open-source!) f-droid.org
for encrypted messaging app, use signal. one downside is that it uses your phone number. available on android, iphone, and desktop. signal.org
to mitigate this, use session, which ties your account with random numbers and symbols. available on android, iphone, and desktop. getsession.org
an off-the-grid social networking app i'm using is manyver.se. android and apple.
telegram has also end-to-end encryption. telegram.org
proton mail is an end-to-end encrypted email service. protonmail.com
there are more apps that uses encryption, so you should search for them if you're interested.

note: many say that telegram is not end to end encrypted by default (!!!) so i still recommend signal or session as a messaging app, since they are recommend by known whistleblowers of other countries and peer reviewed by a lot of cybersecurity companies.
UPDATE: since firechat is not available anymore (and also propriety software) i recommend briarproject.org in case internet is down.

the only problem is that it is android only.
