- pides la lista de productos
(Esto ocurre en el minuto 2 de una auditoría normal de seguridad alimentaria así que, si han pasado alguna... que ahora dudo, lo tendrán a mano)
- pides sus analíticas de producto terminado. Las que tengan.
- solícitas muestras de los productos que tengan (nosotros hemos solicitado a laboratorio externo y hemos tenido comunicado en 3 días. Todo bien)
- La empresa informa a TODOS sus clientes de TODAS LAS MARCAS⬇️
- en tres días te ha dado tiempo a buscar la trazabilidad de lotes (en las auditorías que pasamos, tenemos 3-4 horas MÁXIMO)
- todos tus distribuidores hacen lo propio con sus lotes, e informan a sus clientes.
- retiras (si no lo haces tú, la junta) los lotes de otras marcas ⬇️

Comenzamos con una curiosidad. Y es que, como algunos ya sospecharéis, las bacterias del género Listeria tienen este nombre en honor a Joseph Lister, considerado uno de los padres de la microbiología y precursor de la antisepsia. ¿Sabéis qué otra cosa le debe su nombre?
El descubrimiento de estas bacterias se remonta a 1926, 14 años tras la muerte de Lister, tras ser aisladas por diversos grupos de investigadores en varias especies de roedores que presentaban monocitosis (de ahí el apellido de la bacteria que nos ocupa).
