REAL TALK food science does NOT get its due

Countless scientists have been paid millions to make the food we crave and the food that keeps us alive as a civilization of billions

And I'm not kidding about Doritos! Frito-Lay has put A LOT OF TIME AND MONEY towards formulating The Perfect Crunch, the absolute most satisfying crunch a chip can give you. There's a lot of primitive, lizard-brain stuff going on when you eat, a Crunch Analysis is one of them!
It's been theorized that we love The Perfect Crunch because it mimics the crunch of biting into perfectly fresh and ripe fruit!

And stuff like M&Ms and Skittles are brightly-colored for a good reason. Remember, apes (like humans!) have much better color vision than most mammals.
And it was color vision we actually REACQUIRED through natural selection when our ancestors began to exploit fruit as a food source. They had to be able to see bright colors among green leaves. Skittles trigger the same mechanism that berries once did!

RED! ORANGE. GOOD TO EAT.
People always talk about food science in such sinister terms, "OMG McDonalds pays MILYUNZ so you CRAVE McNUGGIES," but it's actually cool? It's cool we've hacked food to this degree? It's cool that some bread can last for a MONTH? It's cool cheeseburgers basically GET YOU HIGH?
(And again, I'm serious about cheeseburgers, eating meat and cheese together does a special thing to your brain!)
And on a barely-connected note: Plz, lay off on deriding convenience foods? I'm talking about celery already cut into sticks, fish already butchered in fillets, rotisserie chickens, pre-marinated meat and veg.

"They used to sell us WHOLE fish! This is infantalizing!" ppl say.
Yes! They did! An it used to take HALF AN HOUR to get that fish into an edible state, a half-hour your carer had to spare, and a lot of people today don't!

It also used to take LITERAL DAYS to do laundry! We fixed that, too!

And a LOT of this labor fell to women!
And if polls are correct, women are STILL expected by a significant percentage of ppl to take care of most household duties, *while* working full time, with no consideration of home labor as *actual labor.*

No one wants to come home from 8 hours in a cubicle to SCALE A SEA BASS.
They're going to buy the pre-marinated fillets from the deli counter, cuz of course they are, cuz THEY'RE NOT YOUR STAY-AT-HOME MOM and IT'S NOT 1972.

And yeah, it costs extra! Which they're fine paying! And if YOU want whole fish, there ARE way to get that! Shut up! Thanks!
(And this isn't even considering folks with disabilities-- Parkinson's, arthritis, muscular dystrophy, etc.-- who maybe NEED their apples pre-sliced, or their oranges pre-peeled, or their potato salads pre-made. If YOU don't want 'em that way, don't buy them! It's easy!)
I've sen people talk about convenience foods like they're a marker of society's downfall and it's like THANK YOU FOR YOUR VALUABLE INPUT, very clueless, love the notes of Luddite paranoia and refusal to acknowledge the changing roles of women, very cool.
