So last week, I promised to share my recipe for **Bacon Jam** which is to die for. Seriously!
Ingredients:

1.5 pounds of bacon ends & pieces
2 yellow onions, chopped
1/2 cup brown sugar
4 cloves of garlic, diced
1/2 tsp of cayenne
1/2 tsp of cinnamon
1/2 tsp of fresh ground nutmeg
1/2 cup of cold-brew coffee (strong coffee)
1/4 cup of molasses
2 tbsp of balsamic vinegar
Weigh out 1.5 pounds of bacon ends and pieces. You can use regular bacon, but it is more expensive. Cut into 1 inch chunks. Cook on low-medium (3 out of 10) heat until the fat is rendered and the bacon crisped.
Remove the bacon and strain off the grease. I put it in a colander inside a bowl to rest while everything else cooked. Remove half the bacon grease from the frying pan.
In the remaining bacon grease, add yellow onions and cook until translucent. Then add brown sugar and cook for about 5 minutes until the onions get sticky.
Add the garlic, cayenne, cinnamon and nutmeg and the coffee and cook for five minutes before adding the molasses. Bring to a boil, stirring while it heats up to a boil.
Then lower the heat to medium and add the bacon, stir while cooking for about 35-40 minutes, so the bacon absorbs the flavors from the liquid and the moisture cooks away. Add the vinegar at the end. Then add salt and pepper to taste. It may be plenty salty from the bacon.
Let cool and store. Then make the most amazing sandwiches in the universe.

For a bonus. Here is one bacon jam sandwich.
Green Bean Sandwich.

Make bacon jam and aioli in advance. You can cheat and just add 6 cloves of garlic, juice of half lemon, 2 tsp olive oil to a cup of mayonnaise. Mix it up and let rest a bit. That is cheater's aioli and works perfectly well.
Put a pan of water on to boil with a bit of salt in it.

Turn the broiler on in the oven.

Slice a ciabatta or hard roll (firm roll that won't get soggy from egg yolks)

Snap the vine ends off 12 fresh green beans
Cut the hard rolls and put on a rack under broiler to toast.

Blanch the green beans for 60 seconds in the boiling water. Set aside.

Add two eggs to boiling water. Use timer because you want to boil exactly 5 minutes for a soft boiled egg.
While eggs are boiling, remove the toasted roll as soon as it's beautifully toasted.

On one side, spread with aioli and bacon jam. Cover with thin shavings of parmesan cheese.

Remove eggs, drain the pot and run cold water over them.

Now, you can broil the green beans or
you can do what I did, grill them on the hot electric coils after removing the boiling eggs. Using tongs and flipping frequently, and with the FAN ON HIGH, you can get a nice grill in your kitchen.
Lay the green beans on the other side of the roll, making a bed of beans.

Peel and slice the soft-boiled eggs, laying them on the green beans and put the two pieces of the sandwich together.

You cannot slice soft-boiled eggs neatly, so go ahead and make a mess
The runny yolk just brings everything together, mixing with the aioli, the bacon jam, the green beans, everything. It is am amazing sandwich. One of the best ever.
And yes, Green Bean Sandwich sounds like some vegan, health food nightmare, but look, creamy eggs, garlicky aioli, and sweet and salty bacon jam. That is as indulgent as it comes.
