HBO's Avenue 5 is using a premise I've been interested in exploring: space cruise liner forced to convert for long-term survival after an accident. I've had the idea but not an actual story for years, so I'll be interested in seeing how they do it.
I really wish people wouldn't reply to a thread about wanting to see/write one thing with "But wasn't different thing kind of like this?" It feels so reductive to me, and also makes me feel like either I'm not communicating well or I'm wrong in what I want.
Anyway. I never wrote it because I never came up with a story that would have been more than an exercise in logistics and problem-solving, and while that can work (The Martian), I feel like in a large group survival situation it can quickly become didactic.
Also was conflicted about whether to do far future with something like a failed warp drive vs. Next Friday AD with an in-system failure.

Stakes can be bigger with bigger distances, but the more magical technology you have to invent for the sake of the premise...
...the more the problems and solutions of your story become 100% arbitrary.
