Traditionally Indians consume aged rice; which has low GI as compared to the new one. If you consuming new rice grain; just roast it a bit before cooking. It makes it easy to digest says #Ayurveda. The process also helps reducing the GI.

Adding edible acid into rice makes it further easy to digest and also lowers it's GI. In #Maharashtra dish called Varan-Bhat consist of dal, rice, ghee & lime juice to serve the purpose. Could you share such an example from region you belong to?
