Basically, the transition period outlined in the WA only definitively covers EU trade. The EU promised to ask non-EU countries nicely (paraphrased) to treat us as an EU country until end of transition for trade agreement purposes. But they don't *have* to.

Most likely, the Japan trade deal will roll over. Indeed, the UK is applying a kind of "silence means assent" rule i.e. if nobody says anything the presumption is that nothing has changed. But they're not officially on the list of countries that have agreed a rollover.
