Wow! So many great ideas! Thank you all! Now I am going to have trouble choosing... I may have to get another "aubergine" next time I get food in, just to try some other recipes!
I did this. I didn't have all the ingredients for any of the recipes, but I got inspired. The slices are breaded with something I had in my pantry called Killer Krumbs. They are meant for fish fry. And I added some Old Bay seasoning as well. They were really good!
