If I were the EU, I'd be tempted to offer an Article 50 extension until December 2020 on the grounds that it's the same length as the transition period would have been. And make it clear that's truly, resoundingly, definitely and finally it.
Then I would get on with signing trade deals left and right, to rub the UK's nose in what it will be losing, and blunt the shock of the UK's departure by boosting new markets.
We could then participate in European elections, axe May as Tory leader, and take the time to properly reflect on whether Brexit is still worth it. Plenty of time for a GE *and* a referendum if it came to that.
Of course, accepting it would split the Tory party, but it's no good crying over spilt milk until my tears of laughter finally dry up.
