I love "The EU believes it is a legally binding document".

Yes, a treaty is normally considered legally binding. And I don't think a PM who claimed to have got such a triumphant deal will want to renegotiate.
On the detail have been spending a bit of time thinking about how UK wide regulatory bodies will function when in Northern Ireland the regulations will relate to EU bodies but that won't be the case for GB... just in case you thought it was just about customs...
Thus for example will regulatory bodies covering Northern Ireland have access to EU databases when the same body potentially covering GB will not, and how will that work?

On this I suspect neither EU or UK govs have fully thought through implications.
