Day 1 of our lockdown sourdough adventure. Very little to it today. All you need is 100g wholewheat flour & 50ml bottled, untreated or boiled and cooled water. #coronacooking
Mix the flour & water to a paste and put it into your kilner jar. Leave the lid slightly open. Put it somewhere warm, I wrap mine in a blanket to get it really cozy, and leave it for 24 hours. That’s it for today. See you tomorrow! #coronacooking #sourdough
You use Wholemeal to get the starter going, only on the first day. If you have rye flour use that. Lots of people say to use rye on the first day, but I used Wholemeal. From tomorrow on, we will be using strong white flour.

So my mum (who knows everything) has found this method of multiplying fresh #yeast, which many of you in the UK (& me during lockdown) have difficulties getting their hands on. Here's my test.

½ cube fresh yeast
15 gr sugar
100 ml water
100 gr wheat flour

#baking #Cooking
2/

Mix & let it rise until bubbly. Use any available baking form (or ice cube form, which I do not possess) & apportion. Tip: use a wet spoon, dip in water before every transfer (tested, works). Freeze.
3/

Now we need to figure out how powerful that yeast is compared to the original and we will do that tomorrow. Stay with me.

PRAYER ON GIVING ST ANTHONY’S BREAD

~thread
1. O glorious Wonder Worker, father of the poor, who by a miracle didst discover the heart of a miser buried in his gold, and who was endowed with a heart ever ready to help the distressed and afflicted –
#StAnthonyofPadua #bread Image
2. thou who dost ensure a hearing for our prayers by offering them thyself to the Lord; accept in token of our gratitude the alms which we lay at thy feet for the relief of the poor sick children.

May this alms do good to those who suffer and to ourselves. Come to their aid
3. and to ours with the accustomed kindness; help us in our temporal needs, but still more in our spiritual necessities, now and at the hour of our death.
[Indulgence of 100 days, once a day, applicable to the souls in Purgatory.]

We’ve been inspired by @SeamusBlackley - this is our favourite spot in the world, and we are lucky we can get to it in lockdown. We wonder what #bluebellwoodbread will taste like...wish us luck??!!! Image
After 8 hours, we returned to bluebell wood, and our experiment was undisturbed. @SeamusBlackley Image
Safely back in our kitchen, we gave the new member of the family a permanent home. Mick (our white starter) and Mack (our rye starter) were waiting. We decided “Muck” was the perfect name for the newcomer. Image

Fresh Crusty Bread - straight from the oven. Today’s #coronacooking recipe is a ‘no knead’ yeast bread. This takes minutes to put together - a little time to proof, and 45 mins to bake. A fresh, crusty loaf in about two hours. You most try this one. #baking #bread
Ingredients:
400g plain flour
7g dried yeast
1tsp sugar
1tsp salt
360ml warm water

I usually use strong white flour to make bread - there’s none of that in the shops here right now - I know the same is true for lots of you. But you can make this with plain flour. #coronacooking
Dissolve the sugar in the warm water in a bowl or jug. Add the yeast and allow it to dissolve and activate. You’ll know it’s ready when it froths up on the top of the water. #coronacooking

1/ Since the start of our #covid19 #confinement in #France, I've gone back to making homemade #bread about 3 times per week, so between that and the book I'm reading on the history of bread, I'll leave some interesting tidbits here whenever the fancy strikes me.

2/ First up: #DidYouKnow that the #French #blé was once the general word for any #cereal crop ("plante qui produit le grain dont on fait le pain"), much like the 🇬🇧 #English #corn ("any of various cereal plants")?

To talk about wheat, the word was (and remains) "froment".

3/ You know flour and flower are pronounced alike, but #DidYouKnow that the similarity is related to the fact that #flour was once spelled "flower", i.e. "the finer portion of ground grain"?

Not coincidentally, the #French term is "fleur de farine" ("flour flower"). ⤵️

I want to elaborate a little and give the archaeological context for the 'baking bread with no oven' tweet by @SeamusBlackley and to highlight how incredible his backyard experiments are
#OldKingdom bakeries were excavated by @AERA_EGYPT at #Giza in the 1990's. Notice the large bell-shaped bread mould (bedja pot). Bread was mass produced to feed the pyramid builders and was a dietary staple (along with beer and onions)
Hundreds these bell-shaped bread moulds were found in the bakery- which produce a loaf of bread that would have been more than a foot long! The pots were poorly made, coarse material with dung temper and broke regularly
